Good afternoon everyone, welcome back to my Haphazard, Broke Friendsgiving Menu. Every year, there's nothing I look forward to more in the world, seriously, than my mom's sweet-potato carrot puree, so here's how we make a bucket of it. (recipe courtesy of my mom, Dina, who is perfect) Ingredients: 4 pounds of sweet potatoes 2 pounds of carrots 1 tablespoon of brown sugar 2.5 cups water 1.5 sticks of butter dash of nutmeg cayenne pepper to taste sour cream (I'd love to tell you how much but I don't know. I hate sour cream so not a lot) Step One: Microwave sweet potatoes until they are soft (remember to poke them full of holes first). Peel carrots, chop them up, and put them in a saucepan (on the stove) with the water, brown sugar, 2 tablespoons of butter, and salt&pepper if you want. Cook until the water evaporates and the carrots are tender. Step Two: Put the insides of the sweet potatoes and your carrot-butter mixture in your roommate's magic bullet with remaining butter and sour cream (gross), nutmeg, cayenne, and salt&pepper. Blend until fluffy and smooth. Step Three: You all had better seriously get here early if you want any of this, I am not joking. I will eat it all. It tastes like HOME.
